Day 1 - Fresh Start

So, first off forgive me for the poor layout. I meant to do this earlier on an actual computer, but I got carried away with cooking and The Big Bang Theory so here I am, laying in bed, determined to blog about the new year and how my resolution(s) are going the first day (I suppose it's really only one, but within that there are more).

This morning I woke up on a friend's couch in LA, which was the plan, so that was okay, but I was not as hungover as I had expected. I definitely had fun last night, so it was weird how great I felt. Now, you must be thinking, that lucky bitch! I felt like shit! Well, I wish I had, too. I sorta knew that the whole vegan thing wasn't going to start today because when I'm hungover, all I want is a grilled cheese sandwich, preferably with spinach and tomato. However, there was just NO way I could justify getting something that greasy when I felt so great. Just couldn't. So instead I had leftover tacos, meat and all. Sorta my last meat meal, if you will. So, just because I wasn't hungover, I was ridiculously tired and napped most of the day, still in my NYE dress, with the addition of sweatpants.

Around 5 pm I think the new year actually began. I got off the couch and hopped in the shower, stepping on the scale before doing so.

Wasn't as bad as I had thought.

Really, I only gained 2.5 lbs since Thanksgiving, and considering how not well I had been eating and how much I had been drinking, and that I'm still down 7 lbs, I consider this a win.

Once I made myself presentable, I finally headed to the grocery store to stock up on my usual veggies, as well as some Amy's gluten-free dairy-free dinners, since I totally didn't have time to plan a new/adventurous menu for the week. After eating a roasted vegetable tamale with black beans (sooo good!), I finally set to basically just cooking everything I have that's vegan. That is, until I was really distracted by the television and became tired so instead of properly cleaning things and putting them away, I may have just loaded everything in the dishwasher. But hey, that's better than most the people with whom I live.

Anyways, here's the breakdown of what I made. Most of this stuff is literally me throwing food together and hoping it tastes good, and when it does, yelling at myself for not writing down what I did.

1 big batch of quinoa (which made two quinoa breakfast bowls, recipe to come later, and will make some burrito bowl, recipe from, uh, I'll have to add that link later)
Sweet potato fries. Actually, they're yams. Sweet potatoes look like regular potatoes and anyone who says the orange things are sweet potatoes is lying to you. Sweet potatoes just sound prettier, in my opinion. Additionally, I decided they wouldn't taste good heated up later...so I may have eaten them as a snack tonight.
Sweet potato mash. Now this is actually a sweet potato. Originally was supposed to be a stuffed SP, but that really wasn't working out so I just scooped it into a bowl and added tomatoes, onion, spinach, some quinoa, and lentils, along with S+P, olive oil, and garlic powder. This is def one of those I just hope tastes decently well. Oh and some pecans. I thought that would be interesting.

I meant to chop up some fruit and veggies for smoothies, but I know I was losing concentration and didn't want to chop off a finger, so I'm going to be lazy tomorrow and get Jambe Juice and then I'll actually do that tomorrow. Hopefully!
